Aunt Rose's Pumpkin Bread

Serves: 3 loaves
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 2 teaspoons vanilla
- 2 cups pumpkin puree
- 3⅓ cups flour, sifted
- 2 teaspoons baking soda
- 2 teaspoons salt
- ⅔ cup water
- 1 teaspoon baking powder
- 1 teaspoon nutmeg
- 5 Tablespoons cinnamon
- Preheat oven to 325°F.
- Combine sugar and oil. Add eggs one at a time, beating after each one. Add vanilla.
- Sift dry ingredients together and set aside.
- Add dry ingredients alternately with water to egg/sugar/oil mixture.
- Mix in pumpkin and combine until well incorporated.
- Pour into 3 well greased and floured 9x5x3 inch loaf pans.
- Bake in preheated over for 1 hour.
